Morning Glory Muffin

Ingredients
- 1 cup almond flour
- 1/2 cup grain flour
- 2 teaspoon coconut flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda

- 2 eggs
- 2 tablespoons honey
- 1 tablespoon molasses
- 1 teaspoon vanilla flavoring
- 1/4 cup unsweetened applesauce
- 1/4 cup unsweetened shredded coconut
- 1/4 cup golden raisins
- 1/2 cup apple, chopped
- 1/4 cup grated carrot
- 1/4 cup walnuts, chopped
- 1/4 cup crushed pineapple, juice squeezed out (whenever possible)
Instructions
- Preheat oven to 350 degrees. Line muffin tin with liners or lightly spray with nonstick spray.
- In a mixing bowl, sift together almond flour, wheat or grain flour, coconut flour, salt, baking soda, and cinnamon. Set-aside.
- In some other bowl, combine oil, eggs, honey, molasses, vanilla, and applesauce. Mix well. Gradually add flour mix for the egg mix. Gently stir just until combined. Fold in remaining ingredients. Scoop into prepared muffin tin.
- Bake for Quarter of an hour, or until a toothpick inserted to the center happens clean. Let it cool almost completely before serving. Store in refrigerator.
