Ingredients
- 1/2 cup diced onion
- 3 celery stalks, chopped
- 2 poblano peppers, minced
- 1 clove garlic, minced
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (4.5 ounce) can diced green chili peppers
- 1 (14.5 ounce) can diced or crushed tomatillos
- 3 cups chicken broth, low sodium, fat-free (use more broth for the thinner soup)
- 1 cup frozen or fresh corn
- Juice from 1 lime
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon black pepper
- Kosher or sea salt to taste
- 2 chicken breasts fillets, skinless, reduce 1-2\” cubes (no reason to pre-cook)
- 1/2 cup freshly chopped cilantro (for garnish)
Instructions
- Add all ingredients except cilantro towards slow cooker, stir to blend.
- Cover and cook on low 6-8 hours, or high 3-4 hours.
- Add chopped cilantro as the garnish.
