No-Bake Almond Joy Bars

Ingredients
- 2 cups raw almonds
- 1/4 cup coconut oil, melted although not hot
- 2 tablespoons honey
For the Crust:
- 1 cup shredded unsweetened coconut
- 2 tablespoons maple syrup
- 2 tablespoons coconut oil
- 1/2 teaspoon almond extract
- 1 tablespoon water
For the Filling:
- 8 ounces dark chocolate, chopped
- 1 tablespoon coconut oil
- 1/4 cup unsweetened shredded coconut, toasted
- 2 tablespoons almonds, chopped

- Spray a 9×13 inch pan with nonstick spray.
- In a blender, finely grind the nuts. A few large pieces are ok, but you should not over process the nuts. Add the coconut oil and honey. Pulse within the processor until just combined. Transfer mix into prepared pan and press into a fair layer.
For the Crust:
- Combine all ingredients and mix well. Spread coconut mixture within the crust. Be sure the filling can be as smooth as you can. Set up refrigerator although topping is now being prepared.
For the Filling:
- Melt the chocolate, stirring often. Once melted, whisk from the coconut oil. Remove crust and filling layers through the refrigerator and pour chocolate too much in the filling, spreading evenly ostentatious. Sprinkle coconut and almonds ostentatious. Refrigerate until chocolate has hardened. Slice, serve, and luxuriate in!
