Cucumber, Tomato & Crouton Salad with Mustard Vinaigrette
Need a nutritious meal that’s easy to make? That\’s where salads shine.?Tomatoes certainly are a popular ingredient, as they are both tasty and abundant with ascorbic acid and lycopene.?Cucumbers are nutritional powerhouses themselves,?containing cucurbitacins A, B, C, D, and E.?These compounds?block the development of cancer cells in the bodies. Include some onions and croutons and?dress your salad?having a homemade vinaigrette.
Ingredients
- 2 cucumbers, diced
- 2 cups cherry tomatoes, halved or quartered or 3 large tomatoes, sliced
- 4 slices whole grain bread (stale is more preferable)
- 1 big red onion, sliced
- 2 teaspoons dijon mustard
- 4 teaspoons wine vinegar
- 5 teaspoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper
Instructions
- Slice and dicard the perimeters within the bread then cube the bread which has a sharp knife.
- Over medium heat, within a medium saucepan with 1 teaspoon olive oil, toast the diced bread until golden brown then reserve.
- In a smallish bowl, whisk the mustard, vinegar, the remainder 4 teaspoons of additional virgin essential olive oil, salt and pepper. Adjust the quality of salt when asked. You may as well put all these elements in a tiny jar, seal it and shake it away.
- In a large salad serving bowl, distribute the cucumbers, tomatoes, onions, and croutons.
- Dress the salad while using vinaigrette when prepared to eat.
