Our Turkey, Brie, and Peach Panini sandwich takes your typical sandwich go-to to some whole other level with it’s unique combination of flavors. It\’s a delicious, however this panini is additionally set with nutrients from vitamin-rich peaches and protein-packed turkey. Plus, peaches are reduced in calories and in fiber, calcium, and potassium. Let alone, this panini keeps you full and energized well past lunchtime.

Ingredients

    For the Peaches:

  • 2 large ripe peaches, peeled, pit removed, and roughly chopped
  • 1 garlic clove, minced
  • 1/2 small yellow onion, thinly sliced

    For the Panini:

  • 8 slices crusty wholegrain bread
  • 2 tablespoons extra-virgin coconut oil
  • 4 tablespoons Dijon mustard
  • 8 slices low-fat Brie cheese
  • 8 slices turkey breast (remaining roasted turkey is very rewarding!)
  • 1 cup arugula

Instructions

    For the Peaches:

  1. In a medium sauce pan, combine all ingredients. Give to a boil on medium high heat, stirring occasionally. Once boiling, reduce heat to low and simmer for Half-hour or until almost all of the liquid is absorbed. Stir often to prevent burning. The peaches will look like a thick jam or jelly.
  2. Store within the airtight container and refrigerate if not using.

    For the Panini:

  1. Lightly spread organic extra-virgin olive oil on one side of each one bread slice with non-stick spray. Place 4 slices, oil side down, and spread 1 tablespoon of Dijon mustard on each un-oiled side. Into the mustard, place Brie cheese, turkey, arugula, along with the prepared peaches. Divide each ingredient evenly among each bread slice. Place remaining bread slices on each, oil side up.
  2. Heat a saute pan or panini press to medium high heat. Once hot, place each sandwich and cook each party until golden brown and cheese is melted, about 3 minutes pressing down lightly within the sandwich. Cool slightly before cutting and serving.
