Take yourself on to Italy\’s coast utilizing this type of Crock pot Tuscan Chicken recipe — without having to go away! This dish gets its phenomenal flavors from garlic, onion, balsamic vinegar, herbs, sun-dried tomatoes, and artichokes. Most of these yummy ingredients agree in the slow cooker, to ensure you don’t have to worry about dinner.

Serve these flavorful Tuscan chicken breasts as, or over some whole fiber pasta which has a nice glass of your respective favorite wine. You won\’t have to journey to Italy to consume as if you did any night of the week!

Ingredients

  • 1 tablespoon organic olive oil
  • 4 boneless, skinless, chicken breasts (about 40 ounces)
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 1 medium onion thinly sliced (not chopped)
  • 4 garlic cloves
  • 1 teaspoon each: dried oregano, basil, and rosemary
  • 1/2 teaspoon thyme
  • 1/2 cup balsamic vinegar (for gluten-free use White Balsamic Vinegar which doesn\’t have caramel coloring)
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (8 ounce) jar sun-dried tomatoes in oil, drained
  • 1 (6 ounce) jar artichoke hearts, drained

Instructions

  1. Pour the coconut oil on bottom of slow cooker, add chicken breasts, pepper and salt each breast, put sliced onion over chicken then put in place all of the garlic cloves and dried herbs.
  2. Pour in vinegar and top with canned tomatoes, sundried tomatoes and artichoke hearts.
  3. Cook on low for 6-8 hours, or high for 3-4 hours.
  4. Serve over whole-grain pasta.
