Grilled Zucchini Caprese

Delicious grilled zucchini complements layers of melty mozzarella and juicy tomatoes.?Now, doesn’t that sound delicious? But, it gets better! The caprese is topped served by a homemade balsamic, honey dressing that may be crafted from simply that: balsamic vinegar and honey. Those two ingredients simmer in a very pot until thickened after which voila! You might have you a modern-take for a classic Italian favorite.

Serve this dish anywhere grilled veggies are welcome. You probably can’t go wrong! Plus, it’s the perfect low-carb accessory your meals, and it also doesn’t skimp on vital vitamins and nutrients. It’s healthy, wholesome, and friendly into a variety of diets. Grill it down and savor!

Ingredients

    For the Zucchini:

  • 4 medium sized zucchini, cut in half lengthwise
  • 1 tablespoon organic olive oil
  • 2 medium tomatoes, reduce thin circles
  • 3 ounces part-skim fresh mozzarella cheese, reduce thin circles
  • 1/2 teaspoon Kosher salt
  • 1/4 cup fresh basil, chopped fine

    Balsamic Honey Dressing:

  • 1 cup dark balsamic vinegar
  • 1 tablespoon honey

Instructions

  1. Preheat grill to medium heat.
  2. Brush all parties of your zucchini slices with essential olive oil, put on grill flat side down. Grill 5 to Half an hour or until grill marks will form for the zucchini. Revenues.
  3. While another side of your zucchini is grilling you can put tomato and mozzarella cheese, alternating each slice, into the flat side of your zucchini. Close the lid and grill several minute – just before the mozzarella sets out to melt. Carefully remove with the grill and sprinkle with salt and fresh basil. Drizzle with balsamic honey dressing.

    For the Balsamic Honey Dressing:

  1. In a small sauce pan, heat the vinegar and honey on medium heat. Give a boil, stirring constantly. Reduce to some simmer and then cook A couple of minutes, stirring often, until sauce has reduced and thickened.Remove through the stove and cool slightly.
  2. Drizzle over Grilled Zucchini Caprese and serve!
